-2 cups cornmeal mix
-2 Tbs vegetable oil
-1/4 cup vegetable oil for cast iron skillet- if using
- 1 3/4 cup buttermilk
- 1/4 cup jalapeno chiptole jam
-Diced fresh jalapenos (optional)
Heat oven to 400 degrees. If using cast iron, place oil in bottom of 9" skillet and place over high heat on stovetop while making batter. Pour cornmeal into bowl, add oil, eggs and buttermilk mix until combined then stir in jam. Pour mix into sizzling skillet. Transfer skillet to heated oven. Bake for 25-30 minutes or until golden and toothpick inserted into center comes out clean. Serve with butter spread and an extra dollop of jam on top.
